What is Food Safety Management?

Regulation (EU) NO. 852/2004 (article 5)

"Food business operators must put in place, implement and maintain permanent procedures based on HACCP principles..."

Although often confusing this can be straightforward given the right guidance, systems do not have to be complicated. In manufacturing a more strict HACCP system must be followed to ensure safety but within many environments a much simpler and easy to follow system can be used.
